Paleo, Day 30 (Halfway there!)

I had a very yummy breakfast this morning.

Bacon wrapped bananas, fried egg, and grape juice.

Only draw back? ...I smelled like bacon all day.  And as wonderful as bacon smells, it still doesn't smell very good on a person....all day long.

The plate and fork are from my wonderful adventure at DI. :)

Paleo Ice Cream

My mom made some AMAZING ice cream the other day. Composed of carrots, coconut milk, vanilla, and banana. We topped it with toasted coconut and a mint jalapeno syrup. It was divine.

Paleo, Day 18 (Getting Resourceful)

It seems like lately there is very little Paleo food at my dad's house.  Some broccoli here, a small zuchinni there, a pineapple to be cut, nuts, an apple...oh wait....never mind the apple is rotten....

As many of you know, my biggest issue is TIME.  I don't have time to sit and stir fry a bunch of vegetables or cook up some chicken (I don't think there IS any of that at my Dad's house anyway...)  It's been kind of difficult to find things to make meals out of when there are no quick protein sources.  Yesterday my lunch was a meager bit of pineapple, brocolli, and a couple of small tomatoes.  Now, Paleo makes it so you can eat less and still be satisfied just about as long, but even this was quite on the small side. Especially without a fat or protein.

So today, I put on my thinking cap and opened the fridge.  I found Zuchinni. I found some pineapple. Then, miraculousy, I found CHICKEN. All cooked up and ready to go. Emma had decided she didn't want to eat her chicken from last nights dinner.  So as I was brushing my teeth and putting my school stuff in my backpack, I sauteed up the zuchinni, tossed in the chicken, and put it in a container when it was done. Then I topped it with chopped pineapple.

It was delicious.
