Paleo, Day 8 (Raw Eggs)

Last night my mom made Paleo ice cream-Pina Colado style. Yum :) She, my sisters and I, ate it up quickly.  Today, as my mom was driving me home from the Driver's License Division(I PASSED MY PERMIT TEST ON THE FIRST TRY!!), she told me something that she thought would horrify me.

She had put 2 raw eggs in the ice cream last night. Extra protein, ya know. Risk of Salmonella.

The thing is, none of us noticed. And personally, I'm not all that worried about Salmonella. I used to eat raw cookie dough all the time.

So for a snack today I had a Pineapple Banana Smoothie. With a raw egg in it. And it was goooooood.

So if you need some more protein, perhaps you should try it...

Paleo, Day 7 (Satisfaction)

Yesterday I wanted to make Paleo pancakes to satisfy my bread craving, remember? Well, unfortunately, there is not unsweetened applesauce or nut butter at my dad's house.  I made Carrot Hashbrowns to satisfy the somewhat starchy craving I had.

But this morning, oh ho, this morning. I made Pancakes and Carrot Hashbrowns, and had a side of avocado and a cup of grape juice (I just realized something...'a glass of grape juice' sounds way more sophisticated than 'a cup of grape juice', but it also sounds much larger...).

I searched high and low for applesauce for the pancakes. We made a ton of it last fall, canned and frozen.  But I couldn't find any. Not a Tablespoon to be found. So I grabbed the frozen apricots instead, which when warmed up in the microwave produced a slush about the consistency of applesauce. I figured that would work and it did. They were delicious.

Yes. I am satisfied.

P.S. I  peeled, cut, pitted, bagged and froze the apricots I used!!
Mastermind has even got into the spirit of Paleo a bit more this week. I promised her I'd post her creation on the blog so here it is:
Bananas de Mastermind
Bananas, Honey, Coconut (she uses sweetened coconut but there is unsweetened as well that you can (and should) use :)), and chopped up Macadamias.

Paleo, Day 6

Today is my father's birthday.  I made him breakfast in bed. Usually I go a bit more elaborate on breakfasts in bed but I just did pancakes this time. Just regular, traditional, plain pancakes.
I feel kinda lazy and such because of my lack of cooking pizzaz, but it's hard enough to make pancakes when you know you can't eat them.
It's not just hard. It plain old SUCKS. Now I'm craving bread like crazy.

But there is hope.  Because Paleo pancakes exist.
Here's one easy recipe.

(Unfortunately I don't have the ingredients for this at my dad's house. So I'm still craving bread. Ha. Ha. Ha.)

Paleo Day 4

Hello folks. So far the Paleo challenge has been good. My friends made cookies on Tuesday but I didn't eat any. I fried up some zuchinni instead.

Yep, you read that right. They ate chocolate chip cookies while I ate zuchinni.

But honestly, when a cute little girl asks if you want to buy cookies so they can support their brother who's on a mission....it is impossible to resist. *I* wanted to buy cookies from her, that's how persuasive and adorable she was.

One of our very delicious meals was Bolognese over shredded squash and zuchinni. YUM :)

60 Day Challenge!

Hello fellow Cavemen. I would like to inform you that my mother, her boyfriend and I have all decided to do another Paleo challenge. This one twice as long as the last.  It commenced August 15th and October 13th will finish it.

In case you're new and haven't scrolled through my...cough...extremely vast history of posts, that means we will not be eating any dairy, legumes, sugar, or grains.
That's right, folks! None.

This time around we'll be trying out new recipes as well. If there's some amazing foods I've tried, I'll letcha know! But if I don't document, I apologize. School is about to start for this chica and it will make life KA-RAZY!  Remember that my mom's blog has good links for recipes and such, and that she will probably document more than me.
